Like clothing fashion, foods also follow certain trends.  What was 'in' last year is now 'out', and something else has taken its place.  Have you ever looked at a line forming at an eatery and wished this happened at your own business?  Sometimes short-term trends are due to a social media craze or an influencer's latest post, and sometimes they reflect broader changing appetites and form part of a longer-term shift.  Knowing the difference can save you a lot of time and money in chasing the crowds only to find they have moved on to yet another thing.  You don't need to rewrite your entire menu to take advantage of consumer demand, but you do need to be aware of where that demand currently sits.  

Many dessert trends are a variation on a theme.  The flurry becomes the loaded shake becomes the parfait - each of these products has basically the same ingredients but is presented differently.  The milkshake becomes the bubble tea becomes the frappe.  Again, similar ingredients but a slight twist to the preparation.  By having a variation offering on your menu you can capitalise on the latest trend without sacrificing your core products.  For example, if you have a burger bar, you can start off with plain soft serve ice cream as a dessert, but flip to matcha floats, Dubai ice cream, or frozen yoghurt, with very little effort.  

The power of social media and advertising is your friend.  You can very quickly let your local area know what you are serving up by harnessing this.  In the same way you can do your research to see what has become popular. If you don't know how to do this then ask around.  There is a lot of help out there to get you started.  Let people know what you can offer and create some excitement around this by doing specials, family deals, online competitions and stunts.
